Method
Sauté the base
- Melt the unsalted butter in a large pot over medium heat until it begins to foam. Sauté the diced onion for 4 minutes, stirring occasionally, until softened.
- Add the minced garlic to the pot and cook for 1 minute, stirring constantly, until fragrant. Keep the heat at medium so the garlic doesn’t brown.
Cook chicken and simmer
- Add the diced chicken breast and cook for 4-5 minutes, stirring, until mostly opaque on the outside. This helps it finish cooking in the broth.
- Pour in the chicken broth and add the cauliflower florets, garlic powder, and smoked paprika. Bring the mixture to a boil, stirring so the seasonings distribute evenly.
- Reduce to a simmer and cook for 15-18 minutes, until the cauliflower is very tender. The pot should show gentle bubbles rather than a rolling boil.
Blend, finish creamy, and cheese
- Use an immersion blender to blend about half the soup, leaving visible cauliflower chunks. Blend in short bursts to avoid splashing.
- Stir in the heavy cream and return the soup to a gentle simmer. Simmer just until heated through, keeping the texture smooth.
- Stir in the shredded cheddar until fully melted and the soup turns silky and thick. Season with salt and pepper to taste.
Serve
- Ladle the soup into bowls and top each serving with extra cheddar and chives. Serve hot for the creamiest texture.
Notes
For the best texture, blend only about half the soup so you keep cauliflower florets for bite. Store leftovers in an airtight container in the refrigerator up to 4 days; reheat gently on the stove, adding a splash of broth if needed. Freezing is not recommended because dairy can separate when thawed. Dietary swap: use half-and-half or lactose-free cream instead of heavy cream for easier digestion.
