Make the chicken salad
- Combine cooked chicken, mayonnaise, celery, red grapes, pecans, and lemon juice in a large bowl until evenly mixed and creamy.
- Season with salt and pepper, stirring until the mixture is well combined and tastes balanced.
Chill and assemble
- Chill the chicken salad for at least 30 minutes so the flavors meld and the filling thickens slightly.
- Slice the croissants in half before filling so they’re ready to assemble quickly.
- Scoop a generous portion of chicken salad onto the bottom half of each croissant.
- Top with the other croissant half and serve immediately, or wrap for grab-and-go lunches.
Notes
For the cleanest filling, dice the chicken into small, even pieces so it scoops nicely onto the croissants. Refrigerate assembled sandwiches up to 24 hours; the chicken salad keeps 3–4 days in the fridge (freezing not recommended due to texture). If you want a lighter option, swap part of the mayonnaise with plain Greek yogurt while keeping the lemon juice.
