  • 1 lb ground chicken
  • 1 cup shredded zucchini, excess water squeezed out Squeeze well so the mixture forms and fries crisp.
  • 0.5 cup breadcrumbs
  • 0.25 cup grated parmesan cheese
  • 1 large egg
  • 2 clove garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil, for cooking

Method
 

Mix the popper mixture
  1. Combine ground chicken, shredded zucchini, breadcrumbs, parmesan, egg, garlic, and Italian seasoning in a large bowl and mix until well combined (no dry pockets).
Shape
  1. Form the mixture into small balls, about 1½ tablespoons each, and place them on a plate as you go (aim for even size so they cook through together).
Pan-fry
  1. Heat olive oil in a large skillet over medium heat until it shimmers, about 1 minute (the pan should be hot before adding poppers).
  2. Add the poppers in a single layer and cook for 3–4 minutes per side, until golden brown and cooked through (flip once for best browning).
  3. Work in batches if needed to avoid overcrowding the pan, keeping the oil temperature steady so the outside stays crisp.
Serve
  1. Serve the poppers warm with your favorite dipping sauce so they stay crisp on the edges.
