Ingredients

Italian sausage, sliced
  • 1 lb Italian sausage Slice before browning.
Cauliflower florets
  • 1 cauliflower Cut into florets.
Kale
  • 4 cups kale Chop before adding.
Onion and garlic base
  • 1 onion Dice finely.
  • 4 garlic Minced cloves.
Broth and cream
  • 4 cups chicken broth Use for simmering.
  • 1.5 cups heavy cream Stir in after blending.
Seasonings and finishing
  • 1 tsp Italian seasoning Added with garlic.
  • 0.5 tsp red pepper flakes Finish for heat.
  • 0.5 cup parmesan Grated.
  • 0.25 salt To taste.
  • 0.25 black pepper To taste.

Equipment

  • 1 Dutch oven

Method

Brown the sausage
  1. Brown the sausage slices in a large pot until browned, then remove and set aside. Keep the rendered fat in the pot for sautéing.
Sauté aromatics
  1. Sauté the onion in the sausage fat for 4 minutes. Cook until softened, then add the garlic and Italian seasoning and cook for 1 minute.
Simmer the cauliflower
  1. Add the chicken broth and cauliflower, then simmer until very tender for 15-18 minutes. The cauliflower should be easy to pierce with a fork.
Blend and make it creamy
  1. Blend about half the soup smooth, then return it to the pot and stir in the heavy cream. The texture should look creamy and slightly thick.
Wilt kale and finish
  1. Add the kale, sausage, red pepper flakes, and parmesan, then cook for 5 minutes until the kale wilts. Stir until parmesan melts and the soup looks evenly creamy.
  2. Season with salt and black pepper to taste. Taste for balance right before serving.

Notes

For the smoothest creaminess, blend the soup while it’s hot but don’t overfill the blender—blend in batches if needed. Refrigerate leftovers in a sealed container for up to 3 days; reheat gently on the stovetop, adding a splash of broth or cream if it thickens. Freezing is not recommended because heavy cream can separate after thawing. For a lighter option, use half-and-half instead of heavy cream (texture stays creamy but may be slightly thinner).
