Prep and season
- Preheat the oven to 425°F and line a sheet pan with parchment paper for easy release and crisping. This sets the high heat needed for golden skin.
- Pat the chicken thighs completely dry with paper towels, removing as much surface moisture as possible. The drier the skin, the crispier it will look when baked.
- Rub the thighs with olive oil, then sprinkle evenly with smoked paprika, garlic powder, onion powder, salt, and pepper. Make sure every piece is coated in the seasoning blend.
- Arrange the thighs skin-side up on the baking sheet, leaving space between each piece. Proper spacing helps the skin brown instead of steaming.
Bake and finish
- Bake for 35–40 minutes at 425°F, until the skin is deeply golden and the internal temperature reaches 165°F. Look for a crisp, well-browned surface before pulling the pan.
- Let the chicken thighs rest for 5 minutes before serving. This helps the juices settle so the skin stays crisp for the first bite.
Notes
Pro tip: keep the chicken skin-side up and don’t crowd the pan—both prevent steaming and help you get shatter-crisp edges. Refrigerate leftovers in a sealed container for up to 3–4 days; reheat on a sheet pan in a 425°F oven until hot for best texture. Freezing is not recommended for maximum crispness. For a lower-fat option, use skinless thighs and reduce the bake time by about 5–10 minutes, noting the texture will be less crisp than skin-on.
