Method
Season the brisket
- Season the brisket all over with kosher salt and black pepper.
- Pat the seasoning in lightly so it adheres before searing.
Sear for browning
- Heat the olive oil in a skillet over medium-high heat, then sear the brisket for 3–4 minutes per side until browned.
- Transfer the brisket to a plate while you prep the crockpot.
Build the crockpot layers
- Place the sliced yellow onion and minced garlic in the bottom of the crockpot, then set the seared brisket on top.
Mix and braise in Coca-Cola sauce
- Whisk together Coca-Cola, barbecue sauce, and Worcestershire sauce until combined.
- Pour the sauce over the brisket to help it braise evenly.
- Cover and cook on low for 8–9 hours, or until the meat shreds easily with a fork.
Shred and serve
- Remove the brisket, shred it, and toss with some of the cooking liquid before serving.
Notes
For the most tender results, keep the lid on during the 8–9 hours and resist stirring—steam loss can slow shredding. Store leftovers in an airtight container in the refrigerator for up to 4 days; freeze shredded brisket in a freezer-safe container for up to 3 months. For a lower-sugar option, choose a barbecue sauce with reduced sugar while keeping the Coca-Cola and Worcestershire for the signature tang.
