  • 4 garlic Minced (cloves).
Canned beans

Noodles and finishing
  • 6 oz high-protein or whole wheat egg noodles
  • 2 tbsp lemon juice
  • 1 fresh parsley For garnish.

Equipment

Method

Sauté the soup base
  1. Heat the olive oil in a large pot and sauté the onion, carrots, and celery for 5 minutes until the onion starts to soften and look glossy.
  2. Add the garlic and cook for 1 minute, stirring, until fragrant.
  3. Add the diced chicken and cook for 4 minutes, stirring, until lightly browned on the outside.
Simmer
  1. Add the chicken broth, dried thyme, and dried parsley, bring to a boil, then simmer for 15 minutes.
Cook noodles and finish
  1. Add the chickpeas and high-protein or whole wheat egg noodles, then cook for 6-8 minutes until the noodles are tender.
  2. Stir in the lemon juice, then season with salt and pepper to taste.
  3. Garnish with fresh parsley right before serving.

Notes

For the clearest, most flavorful broth, skim any foam that rises during the first simmer. Store leftovers in an airtight container in the refrigerator for up to 4 days; freeze only the soup base (without noodles) for up to 2 months, then add noodles when reheating. Dietary swap: use vegetable broth and omit chicken for a vegetarian version—add chickpeas only and simmer longer to build body.
