Brown the beef and season
- Preheat the oven to 375°F. Brown the ground beef in a large skillet over medium-high heat for 6–8 minutes, then drain excess fat.
- Stir in the taco seasoning, black beans, and diced tomatoes with green chilies, and simmer for 5 minutes until evenly combined.
Assemble the casserole
- Layer 4 tortillas in the bottom of a greased baking dish, tearing them to fit as needed.
- Spread half the beef mixture over the tortillas, then sprinkle with half the cheese.
- Repeat with the remaining tortillas, beef mixture, and cheese.
Bake and serve
- Bake for 20–25 minutes at 375°F, until the cheese is melted and bubbly.
- Top with sour cream, salsa, and fresh cilantro before serving.
