Method
Assemble the sandwiches
- Line a baking sheet with parchment paper for easy release and quicker freezing.
- Scoop about 1/3 cup of softened vanilla ice cream onto the flat side of one large soft sugar cookie.
- Set a second sugar cookie on top, flat side down, and gently press until the ice cream spreads to the edges.
- Roll the exposed ice cream edge in red, white, and blue sprinkles, pressing gently so they stick.
- Place the finished sandwich on the prepared baking sheet and repeat with the remaining sugar cookies and vanilla ice cream.
Freeze and serve
- Freeze the sandwiches for at least 2 hours, or until firm, before serving.
- Wrap individually in plastic wrap for longer storage, up to 2 weeks in the freezer.
Notes
Tip: If the ice cream gets too soft and won’t hold its shape, return the sandwiches to the freezer for 10–15 minutes before finishing the sprinkle roll. Store wrapped sandwiches in the freezer up to 2 weeks; they’re best within 1 week for clean edges and easy slicing. This recipe is naturally vegetarian if your cookies contain no gelatin. For a dairy-light swap, use a vanilla ice cream made with dairy-free milk solids (the assembly method stays the same).
