Ingredients
  

  • 2 large eggs
  • 0.5 cup granulated sugar
  • 0.5 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.25 tsp salt
  • 0.25 cup milk
  • 2 cup assorted colored candy melts
  • 0.33 cup rainbow sprinkles

Method
 

Make the waffle batter
  1. Preheat a waffle iron according to the manufacturer’s instructions.
  2. Whisk together the eggs and sugar until light and fluffy, then whisk in the melted butter and vanilla.
  3. Add the flour and salt, mixing until just combined, then stir in the milk to form a smooth batter.
Cook and shape the waffle cups
  1. Pour about 1/4 cup batter onto the center of the waffle iron and cook for 2–3 minutes, until golden.
  2. Working quickly while warm, drape the waffle over an upside-down bowl and gently press to shape it into a cup, then let cool completely.
Dip and decorate
  1. Melt each candy color separately in the microwave in 30-second bursts, stirring between each.
  2. Dip the rim of each waffle cup into a different colored candy melt, then immediately sprinkle with rainbow sprinkles before the coating sets.

Notes

Let the shaped waffle cups cool completely before dipping so the candy coating adheres cleanly. Store in an airtight container at room temperature up to 2 days; for best texture, assemble and dip close to serving. Freezing is not recommended because waffles may soften after thawing. For a lighter swap, use a reduced-sugar candy melt if available while keeping the same dipping technique.
