Cook the skillet
- Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Add sliced smoked sausage and cook until browned, about 5 minutes, stirring as needed for even color.
- Add red bell pepper and minced garlic, cooking for 2–3 minutes until fragrant.
- Add sliced zucchini and paprika, tossing to coat so the zucchini picks up the smoky seasoning.
- Cook for 6–8 minutes, stirring occasionally, until the zucchini is tender and lightly caramelized.
- Season with salt and pepper to taste, garnish with fresh parsley, and serve warm.
Notes
For deeper browning, let the sausage sit undisturbed for 1–2 minutes before stirring in each step. Store leftovers in the refrigerator up to 3 days; reheat in a skillet over medium heat until hot. Freezing is not recommended for best zucchini texture. Dietary swap: use turkey or chicken smoked sausage to reduce saturated fat while keeping the smoky flavor.
