Ingredients

Soup base
  • 1 lb ground beef Brown and drain before adding to the slow cooker.
  • 1 can (15 oz) black beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (10 oz) Rotel tomatoes
  • 1 can (14 oz) diced tomatoes
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 3 cup beef broth Add more if the soup thickens too much.
  • 0.5 onion, diced
  • 3 clove garlic, minced
Toppings
  • shredded cheddar
  • sour cream
  • tortilla chips
  • jalapeños
  • green onions

Equipment

  • 1 slow cooker
  • 1 cast iron skillet

Method

Brown the beef
  1. Brown the ground beef in a cast iron skillet until fully cooked, then drain off excess grease before transferring it to the slow cooker.
Build the soup
  1. Add the black beans, kidney beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, beef broth, onion, and garlic to the slow cooker, then stir to combine.
Slow cook
  1. Cook on Low for 6-8 hours (or High for 3-4 hours) until the flavors meld and the soup is hot throughout.
Season and serve
  1. Taste the soup and adjust seasoning as needed; if it thickens too much, stir in additional beef broth.
  2. Serve the taco soup loaded with shredded cheddar, sour cream, tortilla chips, jalapeños, and green onions.

Notes

Pro tip: Drain the browned beef well so the soup stays rich but not greasy. Store leftovers in the refrigerator up to 4 days; freeze up to 3 months (leave off toppings until reheating). For a lighter option, use reduced-fat cheddar and light sour cream without changing the cook time.
