Sear and build the base
- Preheat the oven to 375°F. Heat the olive oil in an oven-safe skillet over medium-high heat and sear the chicken until golden on both sides, about 5–6 minutes total.
- Add the garlic and sun-dried tomatoes, cooking for 1–2 minutes until fragrant.
- Stir in the heavy cream and parmesan cheese, simmering until slightly thickened, about 3–4 minutes.
- Add the spinach and stir until just wilted.
Bake and finish
- Sprinkle the mozzarella cheese evenly over the top.
- Transfer the skillet to the oven and bake for 15–20 minutes, until the chicken is cooked through and the cheese is bubbly.
- Let rest for 5 minutes before serving.
Notes
For the creamiest bake, simmer the cream and parmesan until the sauce visibly thickens before adding spinach. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently in the oven or microwave until warm. Freezing: yes, freeze up to 2 months, but sauce may thicken further when reheated. Dietary swap: use half-and-half instead of heavy cream for a lighter version (the texture will be slightly less rich).
