Ingredients

Beef
  • 2.5 lb beef chuck Cut into 2-inch cubes.
  • Salt To taste.
  • black pepper To taste.
Aromatics and braise base
  • 3 onions Thinly sliced.
  • 4 cloves garlic Minced.
  • 3 tbsp vegetable oil For searing and cooking onions.
  • 2 cups dark Belgian ale or stout beer Use 1–2 cups as listed.
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp red wine vinegar
  • 1 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 2 sprigs fresh thyme
  • 2 bay leaves bay leaves
  • 2 tbsp all-purpose flour For thickening after whisking with flour.

Equipment

  • 1 Dutch oven

Method

Brown the beef
  1. Season the beef chuck cubes with salt and pepper, then heat vegetable oil in a Dutch oven over high heat until shimmering. Sear the beef until deeply browned, turning as needed, then remove to a plate.
Caramelize onions and build the base
  1. Add the sliced onions to the Dutch oven and cook over medium heat for 20-25 minutes, stirring occasionally, until very soft and golden. Add the minced garlic and cook for 1 minute, stirring, until fragrant.
  2. Sprinkle in the all-purpose flour, whisk it in, and cook for 1 minute to remove the raw flour taste. Pour in the dark Belgian ale and deglaze, scraping up all browned bits from the bottom.
Braise until tender
  1. Whisk in the beef broth, tomato paste, red wine vinegar, brown sugar, Dijon mustard, thyme, and bay leaves, then add the browned beef back to the pot. Bring to a boil over high heat, then reduce heat, cover, and braise for 2 hours until the beef is very tender.
Finish and serve
  1. Remove the bay leaves and thyme, taste, and season with additional salt and pepper if needed. Serve hot with crusty bread alongside.

Notes

Pro tip: Take time with the onions—20-25 minutes until truly golden gives the stew its signature sweet, dark-broth flavor. Store leftovers in the refrigerator up to 4 days; reheat gently on the stove. Freeze up to 3 months (thaw overnight in the fridge first). For a gluten-free option, use a 1:1 gluten-free all-purpose flour blend for the thickening step.
